The Coffee Sensorium is a research and education project founded by Fabiana Carvalho, PhD. The courses are developed from scientific literature and make complex subjects understandable by those with a non-scientific background.
Fabiana’s research and courses focus on topics related to sensory skills and multisensory integration in the context of flavour perception. Topics related to coffee drinking experience and consumer behaviour, such as multisensory design and e-commerce, are also part of our courses menu.
The Coffee Sensorium collaborates with other academic experts in the field of multisensory flavour perception as well as specialty coffee quality, such as Prof Charles Spence (Oxford Uni, UK) and Prof Lucas Louzada-Pereira (IFES, Brazil).
