In recent years, there have been many developments in gas or electrical heated roasters and research into how the energy transfer could be controlled in a better way.
In this lecture, the results of this R&D-work – carried out at the same roaster using different heating systems – will be shown and the main results discussed.
An overview will be given about gas and electrical heating systems from the past until today. Are there still differences between a gas or electrical heated roasting process? Could the same roasting profile be used for both heating systems or will there be changes necessary? Is there a difference in taste and aroma between the two heating systems? This topic was analysed in a lab study by using a chemical taste sensory system which was compared with the result of a cupping panel.
All this data and figures up to the question if there is a different energy consumption for gas vs. electrical heating will be presented to the audience.
